Panipuri, also known as golgappa, puchka, or pani ke bataashe, is a popular street food snack in India and other South Asian countries. It consists of small, crispy, hollow balls made of semolina or wheat flour, which are filled with a mixture of spicy, tangy, and sweet chutneys, potatoes, and chickpeas. The balls are then dunked into a spiced mint water, and eaten in one bite.
Here is a recipe for making Panipuri:
Ingredients:
- 1 cup semolina (sooji) or wheat flour (atta)
- 1/4 cup all-purpose flour (maida)
- 1/4 tsp baking soda
- 1/4 tsp salt
- Oil for frying
- 2 cups mint-coriander chutney
- 2 cups tamarind-date chutney
- 2 cups boiled and mashed potatoes
- 2 cups boiled chickpeas
- 1 tsp chaat masala
- 1/2 tsp cumin powder
- 1/2 tsp red chili powder
- Salt to taste
- 6 cups water
Instructions:
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Mix well.
- Add enough water to make a stiff dough. Cover and let it rest for 15 minutes.
- After 15 minutes, knead the dough for a few minutes until it becomes smooth.
- Roll out the dough into small circles of around 1-inch diameter.
- Heat oil in a deep frying pan over medium heat. Once hot, fry the circles in batches until they puff up and turn golden brown. Drain on paper towels to remove excess oil.
- In a mixing bowl, combine boiled potatoes, boiled chickpeas, chaat masala, cumin powder, red chili powder, and salt. Mix well.
- To make the pani (water), combine mint-coriander chutney, tamarind-date chutney, water, and salt. Mix well.
- To serve, make a small hole in the center of each fried ball, and stuff it with the potato-chickpea mixture.
- Dip the stuffed ball into the pani and eat it in one bite.
